Hyderabadi Mutton Dum Biryani- Recipe

A very special dish to most of the people in India. Hyderabadi Mutton Dum Biryani Recipe becomes the heart of the feast during Eid festival. Biryani is very essential to all the muslim community, there are two different ways the biryani can be made, one of the famous method is the dum cooked biryani. In this, the biryani rice is parboiled before and the meat is well marinated in advance with all the spices and yogurt and cooked. A huge “Handi” or a vessel is used to cook the biryani , the cooked meat gravy is layered first and then the parboiled rice is added with lots of caramelized onions and saffron milk over it.

Use a heavy bottomed pan to assemble the mutton biryani in. The vessel which the Mutton Biryani is cooked in is sealed with a lid and the lid is held in place with some wheat dough. This prevents any steam from escaping in the vessels and hence all the flavours and aromas are trapped well inside.
